Don’t be gloomy this rainy season though! A great way to spend the weather is by cooking meals that you can enjoy at your own home. Creamy Mushroom Soup Recipe
A good and warm Cream of Mushroom Soup is definitely perfect this rainy season! Since this is a crowd favorite, this can definitely be enjoyed by your family. In this fantastic recipe, use any mushrooms you like: button, shiitake, cremini, or wild; all work great.
Ingredients:
- 5 cups sliced fresh mushrooms
- 1 ½ cups chicken broth
- ½ cup chopped onion
- ⅛ teaspoon dried thyme
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup half-and-half
- 1 tablespoon sherry
Directions:
- Simmer mushrooms, broth, onion, and thyme in a large heavy saucepan until vegetables are tender, 10 to 15 minutes.
- Carefully transfer the hot mixture to a blender or food processor. Cover and hold the lid down with a potholder; pulse until creamy but still with some chunks of vegetable.
- Heat butter and melt it in the same saucepan. Whisk in flour until smooth. Whisk in salt and pepper. Slowly whisk in half-and-half and mushroom mixture.
- Bring soup to a boil and cook, stirring constantly, until thickened.
- Stir in sherry. Taste and season with salt and pepper if needed.

Creamy Chicken Sopas Recipe
You can never go wrong in cooking classic Filipino food this rainy season as this dish is loved by all! In this recipe, we will be showing a creamier version of a Sopas.

Ingredients:
- 12 oz. chicken breasts boneless
- ½ piece of cabbage sliced
- 3 stalks of celery chopped
- 1 piece onion diced
- 3 pieces of hotdog sliced
- ¾ cups carrots diced
- 12 oz. evaporated milk
- 1 ½ cups elbow macaroni
- 2 teaspoons minced garlic
- 1 piece chicken bouillon cube
- 6 to 8 cups of water
- 3 tablespoons cooking oil
- Salt and ground black pepper to taste
Directions:
- Boil 3 cups of water in a medium pot. Add the chicken breasts.
- Cover and cook in medium heat for 15 to 18 minutes. You may add more water if needed.
- Separate the chicken from the water. Let the chicken cool down and then shred. Set both shredded chicken and water aside.
- Heat oil in a large soup pot. Sauté the garlic until it turns medium brown. Add onion, celery, and carrot. Continue to sauté for 2 to 3 minutes.
- Add the shredded chicken. Stir and cook for 1 minute.
- Add the hot dog. Quickly stir and then pour the water used to boil the chicken. Also, pour the remaining water. Let boil.
- Add the Chicken Cube. Stir. Cover and cook for 3 to 5 minutes.
- Put the elbow macaroni in the pot. Cook for 10 minutes.
- Add the cabbage. Stir and cook for 3 to 5 minutes. Note: you can add more water if needed.
- Pour the evaporated milk. Stir, let boil, cover, and cook for another 3 minutes.
- Add salt and ground black pepper to taste.
- Transfer to a serving bowl. Serve.

Chicken Arroz Caldo Recipe
Another classic Filipino dish you can enjoy in this gloomy, cold weather is Arroz Caldo. This Chicken Rice Porridge is perfect to make especially if you’re with a big family! This dish is easy to make and can be served to everyone.

Ingredients:
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 (2 inches) piece of fresh ginger, peeled and thinly sliced
- 2 ¼ pounds of chicken wings split and tips discarded
- 1 tablespoon fish sauce (Optional)
- 5 ¼ cups chicken broth
- 1 cup glutinous sweet rice
- salt and pepper to taste
- 1 green onion, chopped
- 1 lemon, sliced (Optional)
- 1 teaspoon fish sauce for sprinkling, if desired (Optional)
Directions:
- Heat oil in a large pot over medium heat. Cook and stir onion, garlic, and ginger in hot oil until fragrant, about 5 minutes. Add chicken wings; cook and stir for 1 minute. Stir in fish sauce, cover, and cook for another 2 minutes.
- Pour chicken broth into the pot. Stir in sweet rice and bring the mixture to a boil. Cover and cook for 10 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot. Season with salt and pepper.
- Portion soup into bowls and garnish with chopped green onions and toasted garlic. Serve with lemon slices and additional fish sauce, if desired.
